Ingredients
- 6 eggs
- 4 slices bacon
- 1¼ cups cottage cheese
- 1¼ cups shredded Gruyère
- 2 tablespoons cornstarch
- ½ teaspoon hot sauce
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Cook your bacon, I chose to bake mine for 20 minutes at 450 degrees. Then paper towel dry and dice bacon. Set aside.
- Boil water in a pan or kettle.
- Place eggs, cottage cheese, shredded Gruyère, cornstarch, hot sauce, salt and pepper in a blender. Blend for 20-30 seconds.
- Spray your muffin pan using cooking spray.
- Divide the egg mixture into each muffin pan.
- Top each muffin with bacon.
- Place in oven a metal or ceramic baking dish (I used a 9 x 9 OXO baking dish) on the bottom self. This is to steam your oven for the eggs!
- Place the muffin tin in the middle of the oven and bake until you see the edge’s coming off of the sides. Took mine about 30 minutes.
- Let stand for 10 minutes.
- Use a spoon to take the egg bites out and ENJOY! 😋
