Starbucks Egg Bites with Bacon & Gruyère

If you go to Starbucks and order the Egg Bites with Bacon & Gruyère and feel guilty spending money, like me? Then this recipe is SIMPLE to follow. Truly follow this and you will have 12 Egg Bites with Bacon & Gruyère in your fridge for under $20.

Ingredients

  • 6 eggs
  • 4 slices bacon
  • 1¼ cups cottage cheese
  • 1¼ cups shredded Gruyère
  • 2 tablespoons cornstarch
  • ½ teaspoon hot sauce
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cook your bacon, I chose to bake mine for 20 minutes at 450 degrees. Then paper towel dry and dice bacon. Set aside.
  2. Boil water in a pan or kettle.
  3. Place eggs, cottage cheese, shredded Gruyère, cornstarch, hot sauce, salt and pepper in a blender. Blend for 20-30 seconds.
  4. Spray your muffin pan using cooking spray.
  5. Divide the egg mixture into each muffin pan.
  6. Top each muffin with bacon.
  7. Place in oven a metal or ceramic baking dish (I used a 9 x 9 OXO baking dish) on the bottom self. This is to steam your oven for the eggs!
  8. Place the muffin tin in the middle of the oven and bake until you see the edge’s coming off of the sides. Took mine about 30 minutes.
  9. Let stand for 10 minutes.
  10. Use a spoon to take the egg bites out and ENJOY! 😋
Baked bacon is the best!
Ingredients I used minus the salt and pepper.
The eggs, cottage cheese, shredded Gruyère, cornstarch, hot sauce, salt and pepper go into the blender.
